EOS Utility is software for communication with your EOS DIGITAL camera.By connecting the camera and computer, you can download to your computer images saved in the camera's memory card as well as set various camera settings or shoot remotely from EOS Utility on your computer.
Nothing I know of supports live-view. Capture One has an interesting feature called "composition mode" where you can shoot, but it doesn't save to the disk. Once you turn that off, the last shot (and all subsequent ones) are saved to the disk. While it's not the same as live view, it does work for me and allows me to avoid the Canon software (which is really bad, IMO).

ControlMyNikon and ControlMyCanon are two separate software versions, make sure you select the correct software version for your camera. digiCamControl is a free, open source tethering program that gives you full control over Nikon cameras from your Windows computer. First: Nikon Camera Control Pro 2. It works well. But the live view screen is small. I have used the "Universal Access" screen zoom to get a full screen live view but it is not ideal as I have to keep zooming in and out.
Second (and here is the surprise): Helicon Focus and Helicon Remote. This program is designed for focus stacking and exposure stacking (HDR). The Helicon Remote live view looks great! It is full screen, allows for a 100% zoom, small step focus control and single frame as well as brackets and stepped focus captures. I am loving it so far.
Before finding that via a quick Google search I went to the ControlMyNikon site to see if a Mac version exists yet. We teach on Mac's but many students use PC's and CMN does many things better than Nikon Camera Control 2, such as allow you to superimpose an image on top of a live view. This is like the good ol' days of taping layouts to the ground glass of a view camera. It's very useful for product photography in the studio.
But maybe better software will be available soon and those of us who are even more frustrated because we are STILL waiting for our D800E to be delivered (ordered in May) will be able to enjoy all these wonderful capabilities.

Many digital still cameras support a USB connection to a computer to download images taken with the camera. Usually, this USB connection can not be used for anything else. Some cameras support a protocol called PTP that allows the computer to control the camera to a certain extend. iStopMotion supports the use of this protocol with a special animation mode. Using this mode you have to make do without the live preview ghosting that is the biggest feature of iStopMotion, so we do not recommend it. If you already have a digital still camera which you want to use due to lack of alternatives, we recommend that you download a demo version of iStopMotion and test if it works with your camera.
Thanks for your extensive review, Walter, of the capabilities and limitations of this free software utility that Canon includes with all of its DSLR cameras as well as on line. I find it refreshing to learn that you can plug your DSLR that is 10+ years old into a computer that is running a brand new version of the Mac operating system and the software still works, albeit without all of the bells and whistles built into the newer versions of the software. I am not sure that I will use the Canon capabilities to control my camera remotely from my computer, but it is good to know that those capabilities exist. I would be more likely, I think, to use the Canon utility to transfer and review photos on the computer that I have taken with my camera in my hand during an indoor shooting session.
If you are shooting with a Canon camera that is Live View capable you can connect another cable from your camera to the computer. This gives you the ability to have the live view images displayed on the computer while stacking. You will need to make certain the live view images are visible on both the camera and the computer, or the camera will ignore the shutter pulses from StackShot. Nikon users will have the capability to review focus in this manner but will have to turn off live view for the actual stack. Though it's not the first SLR to have a Live View mode, the Canon EOS 1D Mark III is the first professional camera to have a true, full-color live view. It's also the first SLR to allow both remote control and live view through a computer via USB, Ethernet, and WiFi (the latter two methods require a special adapter, the WFT-E2A). Note that many (it used to be all) Canon digicams and SLRs come with some form of remote control software that works via USB.
